Zoodles

Zucchini noodles…because there is nothing better than enjoying a giant bowl of noodles and not feeling like you have to be rolled into bed! Not only are zucchini noodles a great way to avoid the post-past carb crash, but they are a great way to get a few more veggies into your diet and get creative in the kitchen! Zoodles are a lighter pasta option, and are rich in fiber, vitamin C, vitamin B6, riboflavin, and manganese.

 

To make your own Zoodles…

Tools:

  • Spiralizer (can be purchased online at upayanatural.com or many health food stores such as Whole Foods)
  • Peeler (optional)

Preparation:

1. Wash your zucchini.

2. The skin can be left on the zucchini if they are organic (if not, peel the skin).

3. Cut the zucchini into ~2 inch sections. If you want shorter noodles, gently score the side of the zucchini with a slice about1/3 of the zucchini deep.

4. Place a segment of the zucchini on the spiral slicer and slowly turn the handle in a clockwise direction .

5. Server raw in a salad, lightly steam and top with your favourite pasta or pesto, or get creative and find a new way to incorporate your Zoodles into a meal!
