A Joyful Breakfast Giveaway!

2012_09_15_121Joy McCarthy is a holistic nutritionist, RNCP CNP, owner of Joyous Health, corporate wellness speaker, nutrition expert for Global’s Morning Show, freelance writer and consultant to clients from around the globe! She’s also one of our glowing bohemian ambassadors and we are so inspired by her at Tiny Devotions. We’ve paired up with her to end February with a big, joyful boom. Check out why she inspires us so much, and share your favourite joyful breakfast in the comments below! How did Joyous Health come to be?

When I had some health issues in my late teens, early twenties I learned all too quickly how easily your health can slip away from you. It was a 3.5 year journey of not feeling great and suffering the negative effects of hormonal imbalance from dry skin, my hair falling out and more. Fortunately through my own research and empowerment plus the guidance of experts later on, I was able to completely heal my body and feel joyous again. I did this by balancing my diet and my lifestyle and nutritional supplementation.  Joyous Health is not just the avoidance of the occasional cold and flu, joyous health is having a positive attitude, feeling good about your body, having energy for exercise and sex, good digestion, feeling and look fabulous! This is what you will learn and be inspired to achieve in my book, on my website and in workshops I teach. 

What did you love most about writing?

Writing for me is a chance to share my passion for natural health with the world. I love it so much! Writing my book was an incredible, lengthy, but enjoyable process. It is also a very creative process. Interestingly, when I was writing my book I didn’t have an official office at the time so my entire 293 page book was written from café to café and tea cup to tea cup across Toronto! From conception of the idea (to create a healthy lifestyle book and combine it with recipes), to all the nitty gritty of editing, creating and making all the recipes and shooting them with my team it was about a 2 year process. Writing is and has always been therapeutic for me as well. I’m so proud of this book as I know it’s going to transform people’s lives. 

Where were the shots taken? 

Most of the photos were taken up North at my parents house and property in Chatsworth, Ontario. Their neighbours are sheep and donkeys (seriously) and the land is magical. The combination of nature, good joyous vibes from everyone on my team which consisted of my designer/food stylist Carol and my photographer Nick, I couldn’t have asked for a better looking, more joyous book! I just love the natural feel of it. I often here from other writers that the vision did not translate on paper because of the photos and design so I feel very grateful because my book is exactly what I want to be — joyous! Some of the market shots were at Brickworks Farmers Market in Toronto in the Spring of 2013 where I personally shop so it felt very natural and comfortable. The shot of my hubs Walker and I is on the veranda on a hot summer day of my parent’s house drinking white wine, with a straw!

What is your favourite breakfast?

I love so many different foods and always make sure I have variety. But if I had to pick, I would say pancakes. In fact, I was up visiting my parents this past weekend I made everyone the coconut flour banana pancakes from my book. Often times I will make extra so I can free the pancakes then pop in the toaster for a quick breakie. I also love smoothies and scrambled eggs with kale and a side of avocado with a good pinch of sea salt.

What makes you joyous?

Many things!

Good quality hugs, at least 20 seconds.
Knowing and hearing stories from clients and people who have read my book or blog that the information has changed their life.
Brunch with my hubs — that’s our thing… on Sundays we always make a point of going out for brunch with friends or making a yummy breakie at home.
Quiet time up north at my parents far away from cars, street lights and being surrounded by the solitude of nature and the joy of people I adore.
Green juices with a good dose of ginger.
Last but certainly not least, yoga! I do yoga every single day. I can’t always make it to a class at 889 so I often do my own self-practice. It keeps me happy.

    I absolutely love everything in Joy’s cookbook! I’m a big fan of everything green and clean but if I had to pick 1 recipe from her cookbook, it would be the carrot cake balls. They are simple and delicious! I use them as a “tool” to get more people over to the “green side” :)

    My favorite breakfast is Quinoa with pumpkin seeds,cinnamon,chia,coconut oil,and half a banana.Every other day I will add Blueberries and flax and a sprinkle of sunflower seeds. Thank you Joy for inspiring g me to eat earthier each day and to be Joyous! :)

  3. My fave breakfast is avocado and tomato on sprouted grain toast with a sprinkle of salt. Sometimes I add some cayenne pepper, lime, and hemp seeds, a la Mexican Toast by Joy. :)

    Such a fun give away! My favourite breakfast at the moment is chia pudding- can’t get enough! It’s quick and easy and oh so delicious. I love to top mine with fresh fruit, liquid coconut oil, raw nuts/seeds and sometimes a little granola. Cheers to joyous breakfasts!

  5. Well, by far my favourite breakfast is homemade waffles covered with yogourt, then topped with fresh berries…strawberries, blueberries, blackberries, you got it or any other type of fruit for that matter, then drizzled with a touch of maple syrup…and so filling!

    While living and working abroad (in the least health-conscious country in the world – Dubai) my best friend and I came across Joyous Health’s blog and were immediately hooked! We’ve been following her for well over a year, experimenting with different recipes she posts to her website and keeping up with her latest videos. My particular favourites breakfasts have been the over-night oatmeal / chia seed jars and the breakfast bakes (apple spice rice/banana walnut). They totally streamline the morning routine and ensure that we have a nutritious start to our day! Joy, you’ve become an idol to us and we’re so glad to have found you!!!     Breakfast is my favourite meal of the day! Right now I’m addicted to a chai chia seed pudding. I simmer coconut milk with chai tea bags to flavour it then add the cooled milk to the chia seed, shake it up, then pop it into the fridge overnight. BAM! in the morning I have a delicious treat waiting for me that i top with cinnamon, maple syrup, coconut flakes, and fruit. Yum! :)

    My favourite breakfast during the week is a green monster shake. I make it with banana, kale (and lots of it), flax, chia, almond milk, and vegan protein powder. Not only does this shake taste amazing, it is healthy and easy to have on the go! During the weekend I love pancakes! There are so many varieties of pancakes that you can make! There is something about them that just makes me smile thinking about it! I always top them off with maple syrup (like any true Canadian would).

    I like any kind of riff on the Quinoa Breakfast Bowl – so easy to pull together, and can you add any kind of nuts and seeds and fruit you have available! A smoothie is a great option when you have to eat on the run!

    One of my favorite ways to start another joyous day with with an Acai bowl! Honestly, you haven’t lived until you’ve tried them. In my vitamix I toss in an acai smoothie pack (you can get them at any health food store) with some fresh berries, coconut water, banana, maca powder, some ground flax if you need some extra love, and blend! It’s supposed to be super thick so it’s like eating dessert for breakfast (because really, who doesn’t love dessert). I top this with some raw honey, granola, goji berries, chia, and hemp. It’s a superfood fest! During my wellness journey I’ve realized the importance of treating yourself like the superstar you are, and treating yourself to good food is one of the best ways to start. Yoga, living with intentions, goal-crushing, and mala beads are right up there too 😉

    I just finished reading Joyous Health last night and fell in love. I read all the recipes and have been sharing this book with all of my friends in Canada and in the USA. I have read many books focusing on health, and Joy McCARTHY tops them all with her writing style and kitchen friendly recipes. I have to be honest, I have yet to try her recipes as I am waiting on some ingredients to be shipped but I can already tell you that I will fall in love with the Overnight Strawberry Chia Pudding. The Maple Banana Grilled Sandwich will be heavenly too. Nothing beats pure Canadian maple syrup… A taste of home for a Canadian gal living in Arkansas, USA. Cheers to health.

    I don’t usually get the chance to enjoy a good breakfast as I run a home daycare and tend to put the kids needs above my own. Growing up, though, I loved when my mom made thick creamy oatmeal on the stove. I do that now for the kids and I like to add joyous ingredients like ground chia seeds, coconut oil, avocado, banana, & sunflower seed butter.

  16. My favorite breakfast is a smoothie consisting of a banana, handful of blueberries and raspberries, a tsp of cacao powder, flaxseeds, and a pinch off maca powder! So delicious:) I live by the rule of treating people how I’d want my loved ones treated by strangers, being outside, and surrounded by uplifting people who I can learn a thing or two from. :)

    A few months ago, I discovered overnight oats and I completely fell in love! it’s been my favourite breakfast since then. I just can’t get enough! My boyfriend’s now addicted too! They’re so easy to make and they make a perfect, delicious and healthy breakfast on the go. In a small jar, I combine oats, chia seeds, low-fat greek yogourt, peanut or almond butter and my favourite fruits (berries or bananas are perfect for this). I can add maca powder, goji berries, coconut flakes, cinnamon, stevia, a touch of maple syrup…or any topping I have on hand. Possibilities are endless! I top this beautiful mixture with unsweetened almond milk and let it soak in the fridge overnight. And this is where the magic happens! :-)

  18. I love how “real” Joy is and her natural, positive approach to life. I’ve made quite a few of her recipes and I LOVE the goji berry glory muffins and the quinoa berry bowl. On the days that I’m in a hurry a smoothie does the trick too!

    My favourite meal of the day IS breakfast! I like a variety of things – steel cut oats slow cooked with apples, cinnamon and protein powder for good measure; single-serve flax muffin made with flax (duh!), egg, applesauce, coconut sugar, raisins and baking powder – cooked in a mug in the microwave for 60 seconds and then topped with almond butter and some fresh blueberries and pomegranate on the side – so delicious! Or I’ll have eggs scrambled with spinach and kimchi and a couple of slices of sprouted grain bread – so yummy!

  21. My favourite “Joy”-Full breakfast is Granola Breakfast in a Mason Jar. Oh-what-fun that is and super easy! I love to travel with it to work and make all the TTC riders jealous with my Mason Jar of goodness while they sit and eat their Donuts! It’s a smile in a jar that makes you smile all day! :)

    I absolutely love breakfast! I make a huge effort to set aside time in the morning to start my day off right. I have a full glass of water with lemon on an empty stomach while my oatmeal cooks on the stovetop. Wheat-free oats, a tablespoon of coconut oil, nut milk, water, pumpkin seeds, and a spoonful of almond butter. Cardamom, cinnamon, nutmeg. If I’m in the mood for something sweet, I’ll chop up some dates or toss in some dried cranberries as well. When cooked, I drizzle some cool nut milk on top. Fresh’y prepared fruit on the side. Most likely with a homemade chai tea (and a good book, of course)!

    Great post! I have been following Joy for over a year now and have learned so much through her blog!! My joyful breakfast is never a rush! I always include a protein, carb and fat to make sure I get a balanced meal. My fave would probably be homemade granola made with oats, quinoa flakes, coco oil, maple syrup and a bunch of other additions like sesame/sunflower seeds, coco flakes, Brazil nuts. I add that to a few spoonfuls of cultured coconut yogurt topped with berries, bananas and cinnamon. So satisfying and delicious!

    My favourite breakfast from Joy’s cookbook is without a doubt her coconut flour pancakes. This has become a family favourite in our home and its our go to breakfast almost every Sunday morning. These pancakes are loaded with fibre and they taste heavenly with fresh fruit, pure maple syrup, and coconut butter. Our Sundays just aren’t complete without them.

    Joy is an inspiration, and I love all of her holistic nutrition advice! My hubs and I also make a point of having a good, healthful breakie on the weekends, and it usually includes a frittata. We mix farm-fed eggs with milk, and load up on the veggies, herbs, and spices. We add a bit of chedder on top, and bake it in the oven, and it comes out golden brown and very delicious! :) We often have fruit as well such as cut up apples, bananas, and oranges for a vitamin kick, and a fruit-yogurt smoothie to start when we have the ingredients. It’s so much fun to make your own breakie, and I wholeheartedly encourage more people to make their own meals. It’s nice to know your food was made with love, and also exactly what’s in it!     I have to second Kelly’s comment! I love my smoothie for breakfast! Almond or hemp milk, with banana, avocado, berries, vegan protein powder, chia and flax seeds, and maybe some greens+o and raw cacao powder. Yummmmm

  31. I start each day with a green smoothie, usually with romaine, spinach or kale, avocado, banana, apple, ground flax and fresh lemon juice.

  32. I have a few favorites and go to’s. I love to bake an avacaldo with an egg in the center, toast with avacaldo and tomatoe and banana pancakes ( 1 egg and 1 banana)- every Sunday!

    My favorite breakfast ever is BP & B Oatmeal with almond milk. If someone ask me to chose a meal to eat for all the rest of my life, it would be it! The peanut butter and the banana give such a smooth and creamy texture to the oatmeal. Soooo delicious!! And I also add chia seeds to increase the amount of good protein, omega-3 and to balance my blood sugar to keep me from cravings much longer. This is the perfect breakfast before my yoga practice ?

    my fav is either a smoothie with greens, coconut milk, scoop of Genuine health protein powder, hemp or chia seeds and some udo’s omega oil or coconut oil. on other days I eat a farm egg omelet with veggies sautéed in coconut oil. mmm mmm!

    I love oatmeal for breakfast with some chia, almond milk and fruit! It’s so easy to make on Sunday and pack for the week so I always have a healthy option and don’t get tempted to buy a sugar and fat filled muffin. I love Joy’s recipes! Her approach to nutrition is so easy to follow and doesn’t make you feel like you’re missing out.

  45. I have a smoothie almost every morning for breakfast. When I participated in the Eat Well, Feel Well program with Joy I learned the benefit of adding proteins like nut butter, nuts, seeds or a protein powder to reduce cravings throughout the day and to feel fuller longer. Smoothies are such a powerful part of my intention for a holistic approach to self-care and long-term health!

    Joy is one of my idols! Like her, I have experienced tons of health issues in my teens (especially food allergies and RA) and creating a healthy diet with a side of yoga has helped me more than any medication has. My favorite breakfast is a gluten free waffle topped with Greek yogurt, sliced strawberries, and a little cinnamon paired with a spinach/banana/mango/coconut water smoothie!

    My favourite breakfast, like Joy, has got to be pancakes. I like to make mine dairy, gluten and eggfree with coconut flour and leftover almond meal from almond milk making. The almond meal has bits of mejool dates, cinnamon and vanilla and combined with mashed bananas and fresh berries makes the perfect Sunday breakfast. Quick, easy and healthy!

  52. Our breakfast staple is a green smoothie with local organic fruits and berries that we fill our freezer with in the summer to last us all year long. We use local greens (wild harvested or from our garden) when available and in the winter we grow micro-greens (buckwheat, sunflower, kale, etc) indoors for use in our smoothies. Delicious!

  55. My favorite breakfast is definitely Joy’s Coconut Flour Banana Pancakes with coconut butter. They took a few tries for me to get them right, but now they are something I look forward to every weekend!

  56. I love Joy’s chocolate protein squares with a glass of almond milk! The squares are packed with good stuff to keep me going for hours, and it feels like such a treat to have something chewy and chocolatey for breakfast! It’s a joyous grab and go option for those of us who aren’t morning people by nature.

    I am a long time lover of Joy’s coconut pancakes! (Well, since she first shared her recipe on her website, that is). I always make a double batch on a Sunday and reheat them for weekday breakfasts. They are seriously the yummiest pancakes, and they stay with you all morning!

    I am a sucker for all things breakfast. My all time favorite is pancakes, with french toast coming in at a close second. However, now that I find myself with a dairy allergy and gluten sensitivity I have resorted to making my own at home on the weekends, with extras to get me through the week. Certainly no compromising here and Joy has some great recipes that have inspired my most recent attempts, adding to my creativity in the kitchen. The possibilities are endless, right now it’s all about blueberry and almond pancakes. Next up on the list is coconut flour pancake experiments.

    My favorite breakfast smoothie is my “heart-beet” smoothie consisting of beets, strawberries, 1 carrot, 1 apple with a bit of fresh ginger and hemp seeds and ground flas – all organic. Gets my liver going first thing! The intention I always go with these days is to ask for guidance from the universe and to ask myself what I am grateful for and what I am happy about each day.

    I have a crazy, ever-evolving smoothie recipe that I love to make for breakfast (and, if I’m to be perfectly honest, occasionally for lunch, dinner or snack . . .) Always has hemp hearts, maca, almond butter, cacao, cinnamon and coconut milk. Fruit and other add-ins changes with my mood! It always energizes me, keeping me joyful and optimistic all day long!

    I love oatmeal!! Every morning I prepare 3/4 cup oatmeal with 1tbsp hemp seed, 1tbsp flax seeds and 1/4 cup plain yogurt. Then I mix up what I add, fresh berries when they are in season, a little organic honey, a banana, peanut butter etc etc. This breakfast is so tasty, keeps me energized and leaves me with a full belly for hours :)

  68. My favourite breakfast is definitely the newest craze…2 ingredient pancakes! Banana and egg…that’s it. BUT I add a lot to them to make them a complete breakfast! When I make the “batter” I add chocolate or vanilla protein powder (whichever I am feeling that day). Sometimes I put blueberries right into the mix but most of the time I add them after with some strawberries. I garnish with a pinch of cinnamon, some pure maple syrup…and the best part…I grate some Giddy YoYo chocolate on top (vanilla bean and salt is my absolute favourite flavour!)!!! Mmmm…I want some right now! :)

  69. I LOVE Joy’s Banana Walnut Breakfast Bake – it is such a Saturday morning staple in my house! Joy actually inspired me to pursue nutrition school at IHN and I owe the success I’ve had in my healing journey to her. Words cannot describe how grateful I am to her that she left one of her postcards at The European Bakery in Owen Sound over 3 years ago…checking out her website and watching her videos changed my life!

My absolute favorite joyful breakfast is a nice big green smoothie bowl (blended with all sorts of yummies like frozen bananas, berries, citrus, pineapple, hemp seeds, leafy greens, powdered greens), topped with even more fresh fruit, cacao nibs, hemp seeds, and coconut flakes decorated in the form of a smiley face! :) Happy food = happy me!

  78. My favorite breakfast is fresh fruit and yogurt with my sweet baby girls! We love organic blueberries, strawberries and raspberries the most. Sometimes we add a touch of honey or ground flax meal. To really spice things up….a slice of all-natural homemade banana bread. It’s important to teach them to eat clean and healthy from the beginning. XO

  79. My favourite joyous breakfast is hands down a homemade granola (mainly because it makes the house smell so darn good!) with a freshly blended nut/seed milk topped with fresh seasonal fruit! On weekends, I love to pair that with a coconut milk latte to treat myself :)

    My fave breakfast came from Joy! I’ve been reading her blog for a few years now, and love all of the recipes. I’ve got a little guy to get off to daycare in the morning – so speed is key! I love to pop some sprouted grain toast in the toaster, put a little garlic olive oil on it when it’s done, with sliced avocado and chilli flakes on top! YUM!

    My favorite joyful breakfast is eggs Benedict, made with a vegan cashew hollandaise, sliced avocado, sliced tomato and fresh spinach served on a sourdough English muffin! Yum!! :)

    After years of struggling with my relationship with food, I can finally find JOY in eating. I don’t know that I have a favourite breakfast, but I do enjoy the time that it means with my family and knowing that what we are eating is the best way that we can start our day. I am now studying holistic nutrition and enjoying every minute of new recipes and finding what foods best nourish me, my family and our souls. I have just recently started following Joy and find her inspiring. Thank you.

  85. My favourite breakfast is coconut flour pancakes with fresh organic blueberries, maple syrup and coconut oil on top!!!! Joy inspires me because I have come from the same place as her with respect to health challenges and by following her nutritional guidelines and recommendations, I’ve become a very joyous person, inside and outside….:)))

    I looooooove breakfast foods! I could eat it at every meal! Every sunday is healthy pancake day in my house, but I love green smoothies, avocado on toast with pepper and sea salt and tomato, and even oatmeal! Who doesnt love breakfast? A good breakfast makes you happy and sets good vibes for the day! x

    My favorite breakfast is a summertime treat, so I look forward to summer even more! I love fresh, local, and organic berries like strawberries, raspberries, blueberries, and blackberries (plus some pineapple if I want a little extra love) topped with greek yogurt, chia seeds, hemp hearts, and buckwheat. All this is under a generous drizzle of wildflower honey my friend gives me from her farm. I love eating this in my backyard under the summer sun after a little morning yoga sesh. Sets me up for a joyous day! xoxo
